Fruit Muffins

Ingredients:
3 ripe bananas
3 small apples
1 cup berries (frozen or fresh)
3 tablespoons brown sugar
Dash cinnamon
Dash nutmeg
3 cups oats (1.5 cups whole, 1.5 cups ground to flour. You can also use 1.5 cups of a different flour as well)
2 teaspoons baking powder
¼ cup crushed almonds (optional)
Directions:
Preheat oven to 375
Add cups or a small spray of oil to a muffin pan
Peel apples and dice into small pieces
Add apples and berries to a pan and cook down until soft.
Add a small amount of brown sugar to berries towards the end of cooking
In large bowl, mash bananas with a fork until creamy
Add fruit mixture and brown sugar and mix
Add in oats (half whole, half ground) and baking powder
Mix all together and spoon into baking cups
Top with crushed almonds
Bake for 15-18 mins at 375
Makes about 12 muffins
